1. Prepare the Pak Choi
Separate and cut the Pak Choi into pieces. Wash thoroughly and drain well.Separate and cut the Pak Choi into pieces. Wash thoroughly and drain well.
2. Prepare the Pork
Slice the pork into thin pieces.
Add some cornstarch and mix well by hand until all the pork slices are evenly coated.

3. Cook the Pak Choi
Heat some oil in a wok or frying pan until it just starts to smoke.
Add the Pak Choi and stir-fry until cooked.
Transfer it to a large serving bowl and spread it evenly on the bottom.

4. Cook the Pork
Add more oil to the pan and heat until it just starts to smoke.
Add the pork slices and stir-fry until they change colour.
Add some cooking wine and continue stir-frying.
After about 5 minutes, add the red seasoning sauce and stir-fry for another 5 minutes.
Pour the pork and sauce over the Pak Choi in the serving bowl.

5. Add the Dry Spices
Sprinkle Sichuan peppercorns and dried chillies over the pork.
6. Pour Over Hot Oil
Heat a generous amount of cooking oil until it is very hot and starts to smoke.
Carefully pour the hot oil directly over the Sichuan peppercorns, dried chillies, and pork.
The hot oil will release the aroma of the spices. Serve immediately.
